Making our bear claws is a whole day process. We start by slowing cooking our homemade caramel. Once our caramel is cooked in our copper pot, we pour, cool, then add whole salted cashews. Then we begin the process of forming the bear claw by scooping each one out, flash freezing to allow us to handle each item before we enrobe them completely in milk, dark, or white chocolate.
